Today we’re going to show you exactly how to make this festive holiday even greener with cannabis edible recipes – what else?!

1. Best St.Patty’s Day Green Cookies

Creating these edible cookies is easy and fun, and you can decorate them any way you wish. Have a little green food colouring or gel on hand too – to make them the shade of green that everyone will envy.

Equipment

  • Electric Mixer
  • Whisk
  • Mixing Bowl x 2
  • Cookie Sheets x 2
  • Parchment Paper

  • Shamrock cookie cutter
  • Piping bags for icing

Ingredients

  • 3 cups All purpose flour plus more for sprinkling
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup Cannabis butter softened
  • 1 cup granulated sugar
  • 1 egg large
  • 1 tbsp milk
  • 1 tsp pure vanilla extract

ROYAL ICING

  • 5 cups powdered sugar
  • 1/3 cup light corn syrup
  • 1/4 cup milk plus more to thin out icing if needed
  • 1/4 tsp almond extract
  • 5-10 drops green food colouring depends on how green you want it!

Instructions

  • In a large bowl, whisk together flour, baking powder, and salt. In another large bowl, beat cannabis butter and sugar until fluffy.
    Then, add egg, milk, and vanilla and beat until incorporated, then slowly add flour mixture until just combined. Shape into a disk and wrap in plastic.
    Refrigerate 1 hour.
  • Next, preheat oven to 350º and line two baking sheets with parchment paper. Lightly flour a clean work surface and roll out dough until it's about 1/8” thick.
    Use a shamrock cookie cutter to cut out shapes and transfer to prepared baking sheets. Freeze 10 minutes.
  • Bake your cookies until edges are lightly golden, 8 to about 10 minutes. Let cool completely. 
  • Meanwhile, make the royal icing:
    In a large bowl, combine powdered sugar, corn syrup, milk, and extract. Add more milk a teaspoon at a time, if necessary, to thin out frosting. Add green food coloring until desired color is reached. 
  • Transfer about ⅓ of the icing to a piping bag fitted with a small round tip. Pipe around the edges of cookies to create a border or design as you wish! Have fun & be creative. Enjoy!

2. Boozy Shamrock Shake With Cannabis

Ingredients

  • 4 cups vanilla ice cream
  • 1/4 cup Cannabis milk
  • 2 oz Creme de Menthe
  • 2 oz Vanilla Vodka
  • 3-4 dashes Green food colouring
  • 1 dollop whipped cream

Instructions

  • Combine all ingredients in a blender and blend until smooth. Garnish as desired and serve immediately.

3. Guinness & Ganja Brownies

  • 8 x 8 brownie pan
  • Large Bowls
  • Measuring spoons and cups
  • spatula & whisk
  • Cutting Board & Sharp knife
  • Heatproof bowl for melting chocolate on a double boiler

Ingredients

  • 8 oz semi-sweet chocolate cut into small pieces
  • 5 tbsp Cannabis Butter
  • 1/2 cup all purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 tsp salt
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 tsp pure vanilla extract
  • 3/4 cup Guinness Beer
  • 3/4 cup chocolate chips

Guiness Frosting

  • 1/2 cup Cannabis butter
  • 2 1/2 cups icing sugar
  • 1 tsp vanilla extract
  • 3 tbsp Guinness Beer

Instructions

  • Place the oven rack in the center position of the oven, and preheat the oven to 350 degrees F. Spray an 8×8-inch baking dish with nonstick spray. Line with parchment paper, leaving some hanging out opposite sides like handles.
  • In a large heatproof bowl set over a pan of simmering water melt together the chopped chocolate and cannabis butter. When the chocolate is almost melted, remove from the heat and stir until the mixture is completely melted together and smooth. Let cool 5 minutes.
  • In a separate bowl, sift together the whole wheat pastry flour, all-purpose flour, cocoa powder, and salt.
  • Once the chocolate mixture has cooled, whisk in the granulated sugar until combined. At this point, the mixture will look grainy. Stir in the eggs, one at a time, fulling combining between each addition. Keep stirring until chocolate mixture is smooth and glossy. Stir in the vanilla extract.
  • Add the dry ingredients to the chocolate mixture a little at a time,stirring in between each addition, just until the flour disappears. Slowly stir in the beer. Fold in the chocolate chips.
  • Scape the batter into the prepared pan and smooth the top. Place in the oven and bake 30 minutes. Cool to room temperature, then remove from the pan.
  • Meanwhile, prepare the Guinness frosting: Beat the cannabis butter until light and fluffy. With the mixer running on low, slowly beat in the powdered sugar. Add the vanilla extract and 2 tablespoons of stout. Spead over top of your cooled brownies & enjoy!

Ingredients

  • 7 cups Chex Cereal or any cereal you like
  • 1 cup Lucky Charms Cereal
  • 1 cup Crushed pretzels
  • 1 large bag of Chocolate M&M's Or Mint
  • 1 14 oz bag white chocolate chips
  • 3/4 cup Cannabis marshmallows

Instructions

  • In a large bowl combine Rice Chex, 1 cup of Lucky Charms, pretzels, and M&Ms.
  • In a heat-safe bowl, melt the chocolate chips in the microwave for 30 seconds on 50% power. Stir and repeat until the chips are completely melted.Pour the melted white chocolate over the cereal mixture.Stir carefully to combine, as to not crush the Rice Chex.
  • Stir until the mixture is completely coated with the white chocolate. Sprinkle with the cannabis marshmallows.Pour mixture onto wax paper or parchment paper to dry and spread it out.Allow to set until white chocolate has hardened (about 45 minutes) and then break up into pieces and enjoy!
