Tip: keep caramels in fridge; this will ensure they don’t run.
I had runny caramels. My thermometer was off. It said 240, but it was really 220. That twenty degrees makes a huge difference!!!
I wait for the sugar and corn syrup to cool down to 180 b4 starting to add cream mixture. Since it went passed 305 it is hard crack and reheating to 245 insures and soft ball caramel. Just what I do.
At this temp do you know if the thc is converted to cbn by any chance? I heard it evaporates at 294. I made these and they were excellent for sleeping!

Do you happen to know if this could be made with vegan heavy cream and vegan weed butter? I used country crock Plant Butter for it if that helps.
