Cannabis Summer Candy Salad

The last few weeks of summer are upon us, so let’s squeeze every last drop of summer that we can. Today we’re making Cannabis Summer Candy Salad.

Now don’t let the name fool you – this is actually a healthy, refreshing and surprisingly sweet-tasting salad that just looks like candy.

If you want to throw some jawbreakers and warheads in a salad bowl, sprinkled with decarbed cannabis then be our guests! But for today’s recipe, you’ll need a bunch of fresh veg and herbs.

Cannabis Oil Dressing

For this recipe, you’ll need to make cannabis oil for part of the dressing. If you haven’t made it before, the recipe is below:

Ingredients

  • 1/4 to 1/2 Ounce Cannabis
  • 1 Cup Olive Oil

Instructions

  • Decarb your herb by spreading your cannabis evenly on an oven tray And coat with aluminum foil.
  • Place in the oven on 240F/115C 45 minutes, and then let it cool down.
  • Grind your cannabis or chop it in chunks.
  • Place the cannabis buds in a strong mason jar, add olive oil and (1 tsp of sunflower lecithin)
  • Place your closed jar in cold water and let it come to a boil, Boil for 2 to 3 hours.
  • TIP: U can also add other herbs such as Thyme, rosemary etc for an extra flavor.
  • Strain through Cheesecloth.
  • Let it cool
  • Now you can use the Cannabis Oil to make edibles or to cook with the oil

Ingredients For Today’s Recipe

You may have a lot of these ingredients at home, but otherwise it’s a quick stop to the grocery store:

  • baby cucumbers
  • cherry tomatoes – try to get the mixture of golden and red tomatoes
  • chickpeas (can, drained)
  • fresh cilantro, fresh basil and fresh parsley
  • mint (yes, fresh!)
  • 1-2 sprigs of chives
  • red wine vinegar
  • lemon juice
  • dried oregano
  • wild thyme flowers or dried thyme
  • sea salt and pepper
  • garlic cloves
  • watermelon
  • feta
  • candied pecans or toasted almonds

What Can You Expect?

Taste & Flavour Profile: A savoury yet sweet taste, mixed with fresh herbs and crunchy nuts for a surprise in every bite.

Texture: Mostly leafy, with a little crunch.

Time To Make It: The only thing that will take a little time is the cannabis oil. Other than that, you’re looking at about 15-20 minutes total!

Equipment

  • Salad bowl
  • Sharp knife
  • Salad tongs
  • Mason jar with tightly sealed lid

Ingredients

  • 2-3 baby cucumbers chopped into cubes
  • 1 pint cherry tomatoes halved
  • 1 can chickpeas drained
  • 2 tbsp EACH: fresh cilantro, basil, mint and parsley chopped finely
  • 1-2 sprgs chives chopped finely
  • 4 tbsp red wine vinegar
  • 1/4 cup cannabis oil
  • 1/2 cup feta crumbled
  • 1 cup watermelon chopped/cubed
  • 1 tbsp dried oregano
  • 1 tbsp dried thyme flowers or thyme
  • 2 tbsp freshly squeezed lemon juice
  • 1/4 cup candied pecans and toasted almonds
  • 1 tsp freshly minced garlic or more if you like!

Instructions

  • For the salad, chop up cucumbers, tomatoes, watermelon into small cubes and all of the herbs, finely chopped.
  • Place into salad bowl and add drained chickpeas on top

Salad Dressing

  • Add dried thyme, oregano, salt, pepper (a pinch each), red wine vinegar, cannabis oil, minced garlic, lemon juice into a small mason jar with a sealed lid and shake, shake, shake!
  • Assemble the salad by adding all of the ingredients, salad dressing, and then adding nuts on top at the end with feta. Toss lightly, enjoy!
