These easy muffins are a perfect go-to for breakfast or on-the-go weed wellness! Today we are whipping up Apple Banana & Weed Muffins.
Using fresh apples and bananas adds an element of natural sweetness to your muffins while giving your body some much needed fibre too!
You can use your favourite and preferred style of milk, and make sure the bananas are ripe so that they are easy to mash and incorporate into the batter.

You’ll need to make sure you have all of the ingredients such as:
2 red apples 3 ripe bananas milk of choice coconut-infused cannabis oil (recipe below) spelt flour coconut sugar baking soda baking powder ground cinnamon
How To Make Cannabis Coconut Oil
Here’s how to make a delicious infused coconut oil that you’ll be able to use for weeks!
1 cup ground cannabis flower (7-10 grams) 1 cup coconut oil extra virgin
Grind up your cannabis. Anything small enough to fit through the strainer will end up in your finished product, so don't grind your cannabis too finely. Combine oil and cannabis in your double-boiler, slow cooker, or saucepan and heat the two together on low or warm for a few hours. Use a slow cooker on low for 4-6 hours, stirring occasionally. OR, in a double-boiler on low for 8 hours, stirring occasionally; Adding small amounts of water can be added to the mixture to help avoid burning. Note: Temperature of the oil should not exceed 245°F. Strain your oil BUT DO NOT SQUEEZE! If you squeeze the cheesecloth, it will add more chlorophyll to your oil. Refrigerate up to a few weeks, and use in baking, cooking, and topically as well!

Muffin tin – 12 hole
2 red apples 3 ripe bananas 3/12 tbsp milk your choice 3 tbsp cannabis coconut oil 230 g spelt flour 200 g coconut sugar 1 tsp baking soda 1/2 tsp baking powder 1 pinch ground cinnamon
Preheat the oven to 180 C or 350 F Line a 12 hole muffin pan with muffin liners or parchment paper squares Core and peel one of the apples and cut into small cubes, leave the other aside for now. Mix the dry ingredients into a bowl. In a separate bowl mash the banana, add dmilk, oil and stir. Then combine dry and wet ingredients together. Pour mixture into muffin holes. Before baking cut the reamining apple in thin slices and layer gently on top of each muffin batter section. Bake for 25 minutes approx. leave to cool on a muffin rack and enjoy!
