6 Ingredient Strawberry Cannabis Cheesecake Truffles

Love is in the air, as they say – and love will soon tango with your tastebuds when you make these yummy 6 Ingredient Strawberry Cannabis Cheesecake Truffles.

Making these delicious truffles is fun, and can be romantic to enjoy too.

Whether you’re enjoying them for yourself, or with a partner – you’re going to love the ease, and flavours especially since we are, of course, infusing them with weed.

When dipping the truffles, you can use a spiral dipping tool if it works for you – but it really isn’t a requirement. (just something fun to elevate your experience a little more)

If you’re okay using red food colouring, enjoy mixing up a bit with white chocolate to make it pink and drizzle it all over. You can use an empty squeeze bottle or a fork to create gorgeous designs.

What Six Ingredients Do I Need?

As promised, you’ll only need five ingredients and your truffles are well on their way to your mouth!

Here they are in no particular order:

  1. Graham Cracker Crumbs
  2. Cream Cheese
  3. Confectioners Sugar
  4. Finely Diced Strawberries
  5. Cannabis Sugar (recipe below)
  6. White Chocolate

How Do I Make Cannabis Sugar?

Cannabis sugar can be used with so many tasty baked sweets, or just as a nice addition to your morning coffee or tea in the mornings or afternoons.

Here’s how to make Cannabis sugar:

Cannabis sugar requires a couple more steps and takes a little longer from start to finish than cannabis butter. The pro of making cannabis sugar is that you could safely store your cannabis sugar for long periods of time.
Just like cannabis butter, you will need to decarb your cannabis prior to infusing it. And if you like a more potent infusion, you want to infuse your cannabis with high proof alcohol up to 2 weeks. But in this recipe we will show you how to do it quicker, if you don’t have that time.
Since we are not infusing the tincture for 2 weeks, we need to boil off the remaining solvent in the tincture. This process needs to be done in a safe environment, preferably outside far away from any stove sparks or anything else that can trigger a fire. A rice cooker is a safe way to do it.
Once your cannabis sugar is ready, you can use it any Thanksgiving recipe that requires sugar in it.

Ingredients

  • 1/4 – 1/2 ounce cannabis
  • 1 cup high proof alcohol such as Everclear
  • 4 cups sugar
  • Ricecooker to boil of solvent

Instructions

  • Place the decarbed cannabis in a mason jar.
  • Crush the plant material using a stick of clean, untreated wood or any other similar device.
  • Continue to crush the cannabis, while adding 1/2 cup solvent until the plant material is completely covered and soaked. Stir the mixture for about three minutes. As you stir the mixture, the cannabinoids will begin dissolving off the plant into the solvent.
  • Strain the solvent mixture into another bucket. At this point, you have stripped the material of about 80% of its THC.
  • Repeat this process for the second wash. Again add 1/2 cup solvent to the plant material and work for another three minutes to extract the remaining THC.
  • Strain this new solvent mix into the bucket containing the first mix that was previously separated.
  • Discard the twice washed plant material.
  • Pour the solvent mixture through a cheesecloth or fine filter into a clean bowl.
  • The solvent is highly flammable, so boil the solvent off in a safe environment. A rice cooker is a safe way to do it. And prefferably outside, far away from any sparks or heating elements.
  • Continue to reduce the liquid until you have roughly 1/2 cup liquid left.
  • Now combine your sugar and 1/2 cup tincture and mix well.
  • let this mixture air-dry overnight.
  • Using a solid object, like a bottle, can or the bottom of a glass, crush up the sugar to remove the lumps.
  • Your cannabis sugar is now ready for use.

  • Parchment Paper
  • Hand Mixer or Standing Mixer
  • Mixing Bowls
  • measuring cups and spoons
  • Spatula

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 4 oz cream cheese
  • 1/3 cup confectioners sugar
  • 1/3 cup finely diced strawberries
  • 10 oz white chocolate finely chopped
  • 1/4 cup cannabis sugar to sprinkle on top after

Instructions

  • Line a large baking sheet with parchment paper or a silicone baking mat. Set aside.
  • Using a handheld mixer or a food processor, mix the graham cracker crumbs, cream cheese, and confectioners’ sugar together. Keep mixing until a big clump forms. With a rubber spatula stir in the strawberries.
  • Drop balls– about 1.5 – 2 teaspoons of mixture per truffle– onto the lined baking sheet. Chill in the refrigerator for 30 minutes. During this time, the truffles will “set” making them easier to roll into smooth balls. Roll into smoother balls after they’ve been refrigerated. Place back into the refrigerator as you melt the chocolate.
  • Coat in chocolate: Melt the white chocolate in the microwave. Place the chocolate in a medium heat-proof bowl. Melt in 15 second increments in the microwave, stirring after each increment until completely melted and smooth.
  • Dip each truffle completely into the chocolate using a fork, then gently on one side only, dip into the cannabis sugar – just use a plate. Place balls back onto the baking sheet after you dip each one.
    If you choose to, you can stir food coloring into any leftover white chocolate, then drizzle over truffles.  Refrigerate for 30 minutes or until chocolate has completely set before serving.
