Potatoes have had a bad go lately – rumours about their lack of nutrients and minerals have been spreading across the world wide web!
But did you know that potatoes are packed with nutrients?
Let’s resurrect the potato and start loving on it again, shall we?!
Potatoes Are Healthy!
One baked potato (skin on), has an alphabet of nutrients:
Fibre
Vitamin C
B6
Potassium
Maganese & Magnesium
Niacin
Folate
Phosphorous
And these are all nutrients your body needs!
Potatoes are also (drum roll please…) GLUTEN FREE! Perfect for anyone watching their intake, or with any intolerances and allergies.
Making Weed Butter
Making cannabutter is arguably one of the most versatile edibles you can create.
For today’s recipe, we’re slathering our potato recipes with it, but you can whip up a batch of cannabis butter, freeze it, and use it anytime you want.
A recipe on how to make cannabis butter at home. After many cannabutter recipes, we find that this is by far the best way to infuse weed with butter.
Decarboxylate your weed by spreading your cannabis evenly on an oven tray And coat with aluminum foil.
Place in the oven on 240F/115C for 25 till 45 minutes, and then let it cool.
Grind your dry cannabis or chop it till fine.
Place the cannabis in a strong mason jar, add butter and (1 tsp of sunflower lecithin)(optional)
Place your closed jar in cold water and let it come to a boil, Boil for 2 to 3 hours.
Strain your butter through a cheesecloth.
Cool down
Now you can use the Cannabis Butter (Cannabutter)

If using a mason jar, be sure to start with cold water. Furthermore, it is imperative to let the water cool gradually so that your glass will not shatter.The video guide might be slightly different than the blog recipe. The blog recipe is the most updated and accurate.

Creamy Cannabis Scalloped Potatoes
Loaded with potatoes, cheeses, cream and cannabutter! A perfect dish for any holiday or dinner.
To make the sauce, melt cannabutter, onion and garlic over medium low heat. Cook until onion is softened, about 3 minutes. Add flour and in, whisk & cook for 1-2 minutes.
Reduce heat to low. Combine milk and broth. Add a small amount at a time whisking to thicken. Add in all of your choosencheeses, leaving a handful to sprinkle on top at the end. The mixture will become very thick, continue adding a little bit of liquid at a time whisking until smooth.
Once all of the liquid has been added, bring to a boil over medium heat while continuing to whisk. Stir in salt and pepper and let boil 1 minute.
Assembling Scalloped Potatoes
Grease a 9"x13" baking dish. Place ⅓ of the potatoes in the bottom in layers, and season with salt and pepper. Pour ⅓ of the cream sauce sauce over top.
Repeat layers ending with cream sauce every time until it's done! Cover and bake for 45 minutes.
Once you are at 45 minutes, remove the cover and broil for 10 minutes to crisp up the top of the potatoes and cream sauce.
It will be smokin' hot – so leave for 15 minutes before serving, and enjoy!
Wash potatoes, and then rub each potato with 1 teaspoon of oil, and prick the top with a fork.
Place the potatoes on a parchment paper-lined baking sheet and bake for 1 hour.
Next, Transfer potatoes to a cutting board, and cut in half. Leave the oven on.
Using a spoon, gently scoop out the inside flesh of the potatoes and transfer to a medium bowl. Keep the "boats" of potato skin, intact.
Add the sour cream, melted cannabis butter, salt, pepper, ½ of the shredded cheese, and ½ of the herbs and combine with a hand mixer or potato masher until smooth.
Transfer the potato mixture back into the scooped out potato skins.
Bake for another 10 minutes
Sprinkle the potatoes with remaining cheese, and bake for 5 more minutes, until the cheese is melted.
Top with herbs and bacon, and eat immediately!! Enjoy.
