Double Baked Weed Potatoe Boats

Potato 'boats' loaded with cannabis butter and cheese!

Equipment

  • Parchment Paper
  • Spoon
  • Large Bowl
  • hand mixer or potato masher

Ingredients

  • 2 russet potatoes
  • 2 tbsp olive oil
  • 1/2 cup sour cream plus more for dressing after
  • 4 tbsp cannabis butter melted
  • 1 tsp each: salt & pepper
  • 1 cup shredded cheddar cheese divided
  • 1/2 cup green onion chopped
  • 1/2 cup chives chopped
  • 1/2 cup real bacon bits

Instructions

  • Preheat the oven to 400˚F 
  • Wash potatoes, and then rub each potato with 1 teaspoon of oil, and prick the top with a fork.
  • Place the potatoes on a parchment paper-lined baking sheet and bake for 1 hour.
  • Next, Transfer potatoes to a cutting board, and cut in half. Leave the oven on.
  • Using a spoon, gently scoop out the inside flesh of the potatoes and transfer to a medium bowl. Keep the "boats" of potato skin, intact.
  • Add the sour cream, melted cannabis butter, salt, pepper, ½ of the shredded cheese, and ½ of the herbs and combine with a hand mixer or potato masher until smooth.
  •  Transfer the potato mixture back into the scooped out potato skins.
  • Bake for another 10 minutes
  • Sprinkle the potatoes with remaining cheese, and bake for 5 more minutes, until the cheese is melted.
  • Top with herbs and bacon, and eat immediately!! Enjoy.
