We’re getting closer to better weather all over the world, and with that comes the battle of what to cook! Here are 2 Easy No-Cook Cannabis Dinners.

Let’s face it, even the best of Chef’s struggle from time to time, or they’re so busy they just don’t have the actual time to cook.

Cooking a delicious dinner takes planning and preparation. Not to mention a budget and a sense of imagination.

I’m pretty sure the words: “What should I cook for dinner?” are famous in many homes by now, and it’s partly due to the fact that we’re all staying in a lot more, and (applause) cooking at home.

But who said cooking had to involve gassing up the stove, the BBQ or heating up the entire house with the oven? Nobody!

If truth be told, a yummy little meal with little to no effort that has flavor is everything to me. Plus? The clean up is ten times easier and that works for me!

You might be thinking that this article is going to deliver you a bunch of salads right? Well, yes – salads are a part of it – BUT there’s something else in store for you that I think you might just love.

So slap on your aprons, get your Cannabis Chef mindset prepared, and let’s not cook!


Cannabis Butter & Decarboxylation

The very first couple of things you’ll need to have on hand is decarbed weed, cannabis oil, and cannabis butter.

IF you’re just beginning or starting out we’ve got you. Here are the step-by-step recipes for decarbing and making cannabutter.

You MUST decarb cannabis when making edibles of any kind. Please don’t skip this step – it’s crucial!


How To Make Cannabutter

Making Cannabis butter is so versatile and easy. Once your weed is decarbed, follow the recipe below.

You can freeze your butter too if you wish for a little longevity.

Ingredients

  • 1/4 to 1/2 Ounce Cannabis 
  • 1 cup Butter

Instructions

  • Decarboxylate your weed by spreading your cannabis evenly on an oven tray And coat with aluminum foil.
  • Place in the oven on 240F/115C for 25 till 45 minutes, and then let it cool.
  • Grind your dry cannabis or chop it till fine.
  • Place the cannabis in a strong mason jar, add butter and (1 tsp of sunflower lecithin)(optional)
  • Place your closed jar in cold water and let it come to a boil, Boil for 2 to 3 hours.
  • Strain your butter through a cheesecloth.
  • Cool down
  • Now you can use the Cannabis Butter (Cannabutter)

Notes

If using a mason jar, be sure to start with cold water. Furthermore, it is imperative to let the water cool gradually so that your glass will not shatter.

#1. Pesto & Prosciutto Zucchini Linguine

You’ll need a vegetable spiralizer for this one, and that’s pretty much it!

  • Veggie Spiralizer
  • Food Processor or Bullet blender
  • Spatula
  • Garlic press (optional)
  • Veggie peeler

Ingredients

  • 2 med Zucchinnis washed and peeled
  • 2 cups Spinach fresh
  • 1 cup basil leaves fresh
  • 1/2 cup pine nuts
  • 1/2 cup parmesean cheese fresh
  • 2 cloves garlic minced or pressed
  • 1/4 cup cannabus oil
  • 2 tbsp lemon juice fresh
  • 1 cup cherry tomatoes halved
  • 1 pinch each : salt & pepper
  • 5-8 slices prosciutto ripped into slivers and slices

Instructions

  • Use a spiralizer to cut the zucchini into zoodles. Add the zoodles to a serving bowl and set aside.
  • Make the pesto: in a food processor or blender, add the spinach, basil, pine nuts, Parmesan, garlic, cannabis oil, lemon juice, salt, and pepper.
  • Scoop the pesto over the zucchini noodles, then add the cherry tomatoes and prosciutto. Toss until the zoodles are well-coated.
  • Sprinkle with Parmesan and garnish with basil and lemon wedges.

#2. Chilled Cucumber,Cannabis Avocado Soup

This ‘soup’ may not sound very soup-y, but believe you me, it’s loaded with flavor and super easy to make too!

Ingredients

  • 1 whole English cucumber peeled, and cut into cubes
  • 2 med avocado diced
  • 1 cup Greek yogurt
  • 1 cup veggie broth
  • 1 tbsp lemon juice fresh
  • 1/2 tbsp apple cider vinegar
  • 2 tbsp scallions
  • 1 dash each: salt & pepper
  • 4 tbsp Cannabis oil save 1 tbsp to drizzle on top later

Instructions

  • In a food processor or blender, add the cucumber, avocado, Greek yogurt, vegetable broth, lemon juice, apple cider vinegar, scallions, cannabis oil, salt, and pepper. Blend until smooth and creamy.
  • Chill in the fridge for 30 minutes, or until you're ready to serve. Drizzle with cannabis oil and a few slices of cucumbers or some toasted almonds for extra crunch!
