Pumpkin Spice Muffins with Cannabis Butter

For some of us, it’s the most wonderful time of the year! Today we’re whipping up a batch of Pumpkin Spice Muffins with Cannabis Butter.

What better way to celebrate fall and back to school than with a healthy muffin or seven?

These soft, moist and pumpkin-spiced treats are the best way to chill, relax and zen out after a day of work and kids – OR to start your day too!

Pair these pumpkin spice muffins with a cup of CBD coffee and you’re all set.


Cannabis Butter Recipe

A recipe on how to make cannabis butter at home. After many cannabutter recipes, we find that this is by far the best way to infuse weed with butter.

Ingredients

  • 1/4 to 1/2 Ounce Cannabis 
  • 1 cup Butter

Instructions

  • Decarboxylate your weed by spreading your cannabis evenly on an oven tray And coat with aluminum foil.
  • Place in the oven on 240F/115C for 25 till 45 minutes, and then let it cool.
  • Grind your dry cannabis or chop it till fine.
  • Place the cannabis in a strong mason jar, add butter and (1 tsp of sunflower lecithin)(optional)
  • Place your closed jar in cold water and let it come to a boil, Boil for 2 to 3 hours.
  • Strain your butter through a cheesecloth.
  • Cool down
  • Now you can use the Cannabis Butter (Cannabutter)

Notes

If using a mason jar, be sure to start with cold water. Furthermore, it is imperative to let the water cool gradually so that your glass will not shatter.

Ingredients

Struesel Topping Ingredients

  • 1/2 cup all purpose flour
  • 1/4 cup white granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp pumpkin pie spice
  • 1 pinch salt
  • 4 tbsp Cannabis Butter melted

Pumpkin Spice Muffin Ingredients

  • 1 1/2 cups all purpose flour
  • 3/4 cup granulate sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 2 tsp pumpkin pie spice
  • 1 cup canned pumpkin
  • 2 lg eggs
  • 6 tbsp cannabis butter melted
  • 1/4 cup sour cream
  • 1 tsp pure vanilla extract

Instructions

  • Preheat oven to 350° and line muffin tin with liners. Make crumb topping: In a medium bowl, combine flour, sugars, pumpkin pie spice, and salt. Stir in melted Cannabis butter until crumbs form. 
  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice. Add pumpkin, eggs, more cannabis butter, sour cream, and vanilla, and mix until combined. 
  • Divide batter into muffin liners. Top each with crumb topping. 
  • Bake until muffins are golden brown and a toothpick comes out clean, about 25 minutes. Let muffins cool in pan, then serve.
