No-Bake Sweet Potato Cheesecake Bars

Whoever decided that this combination would go well and taste great deserves a medal. Today we’re whipping up No-Bake Sweet Potato Cheesecake Bars.

I love how the culinary world has exploded over the last decade with incredible ideas, restaurants, food and edibles.

Today’s recipe, my friends, dabbles in healthy, rich, gooey perfection that doesn’t need to be baked – but you’ll GET baked!

I can’t think of a lovelier combination when in the cannabis kitchen, can you?

What Ingredients Do I Need?

Well, the name says it all so make sure you have some sweet potatoes, but you’ll also need the following:

  • You will need whole graham crackers, cannabutter and dark brown sugar
  • Cream cheese, sugar, whipped topping (Cool Whip) and vanilla extract
  • Sweet potato, cinnamon, & nutmeg

The beauty of this recipe is that it’s not too sweet, but just right!

A recipe on how to make cannabis butter at home. After many cannabutter recipes, we find that this is by far the best way to infuse weed with butter.

Ingredients

  • 1/4 to 1/2 Ounce Cannabis 
  • 1 cup Butter

Instructions

  • Decarboxylate your weed by spreading your cannabis evenly on an oven tray And coat with aluminum foil.
  • Place in the oven on 240F/115C for 25 till 45 minutes, and then let it cool.
  • Grind your dry cannabis or chop it till fine.
  • Place the cannabis in a strong mason jar, add butter and (1 tsp of sunflower lecithin)(optional)
  • Place your closed jar in cold water and let it come to a boil, Boil for 2 to 3 hours.
  • Strain your butter through a cheesecloth.
  • Cool down
  • Now you can use the Cannabis Butter (Cannabutter)

Notes

If using a mason jar, be sure to start with cold water. Furthermore, it is imperative to let the water cool gradually so that your glass will not shatter.

Equipment

  • Square casserole dish
  • Mixing Bowls
  • Measuring cups
  • Large pot
  • Potato masher
  • Spatula
  • Hand Mixer or Standing Mixer
  • Potato Peeler

Ingredients

  • 16 oz cream cheese softened not melted
  • 1 1/2 cup sugar
  • 1 cup whipped topping (cool whip)
  • 1 tbsp vanilla extract

Sweet potato layer

  • 1 large sweet potato
  • 4 oz cream cheese softened
  • 1/2 cup sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg

Crust

  • 12 whole graham crackers
  • 1/2 cup cannabutter melted
  • 1/4 cup dark brown sugar

Instructions

  • Place your graham crackers in a zip lock bag and crush into fine pieces using a rolling pin for the crust layer. Add finely crushed crackers to a large bowl. Add brown sugar, melted cannabutter, and mix using a fork. 
  • Add the Graham Cracker mixture to a square casserole dish. Press evenly into the bottom of the dish until it is fully covered.
  • Peel the skin from the sweet potatoes and cut them into cubes. Boil for 30 minutes.
  • Drain sweet potatoes from water and add to a large bowl. Mash using a potato masher, and add all of the sweet potato layer ingrediens into a bowl. Using a hand mixer, blend until smooth.
  • For the cheesecake layer, add cream cheese, sugar, and vanilla extract into a separate bowl. Mix until smooth (for 3-5 minutes) using a hand mixer. Add the cool whip and fold it in.  
  • Pour your cheesecake mixture over the crust spreading evenly. Add the sweet potato mixture over the cheesecake layer and spread evenly.Refrigerate for at least 6 hours before serving. When ready to serve, cut your pieces into even squares.
