Magic Marijuana Cookie Bars

These Magic Marijuana Cookie Bars are such a treat! They’re bars with layers of chocolate, cannabutter, butterscotch, nuts and coconut.

They come together with a delicious coconut flour crust, sweetened condensed coconut milk, stevia-sweetened chocolate chips.

This recipe also happens to be gluten-free, dairy-free, low carb and vegan without sacrificing taste whatsoever!


How To Make Magic Cookie Bars

Start with baking the crust, and then you’ll top it with nuts, chocolate chips, butterscotch chips and shredded coconut.

Of course, you can add in anything else you love like pecans, nuts, or caramel – so be creative if you’re in that vibe. Once you’ve got everything together, you’ll pour sweetened condensed coconut milk over the top of the magic cookie bars, and bake it again.

Your kitchen will smell incredible, and you won’t be able to wait!

What Ingredients Do I Need?

You’ll need a few ingredients and that’s it!

  • coconut flour
  • coconut weed-infused oil
  • baking soda
  • sweetener or cannabis sugar
  • chocolate chips
  • butterscotch chips
  • pecans
  • shredded coconut
  • sweetened condensed coconut milk

How Do I Make Sweetened Condensed Coconut Milk?

  • 2- 14 ounce cans of full-fat coconut milk
  • 1/2 cup cannabis sugar, coconut sugar, honey or swerve confectioners sugar

Instructions

  1. Pour the coconut milk into a medium saucepan.
  2. Bring to a boil over medium heat for 10 minutes, stirring regularly to prevent burning.
  3. Turn heat on low and add your choice of sugar or swerve and whisk until the sugar has dissolved.
  4. Simmer on low for 15-20 minutes, or until thickened. Stir.
  5. Once the coconut milk has thickened, pour it into a jar or dish, and let it cool.

Equipment

  • Mixing Bowl
  • 8×8 inch oven-safe pan
  • measuring cups and spoons
  • Spatula
  • Food Processor

Ingredients

  • 1/4 cup + 2 tbsp coconut flour
  • 6 tbsp cannabis coconut oil
  • 1/4 tsp baking soda
  • 2 tbsp granulated sugar cannabis sugar or other

Topping

  • 1/2 cup chocolate chips
  • 1/2 cup butterscotch ships
  • 1/2 cup chopped pecans
  • 1/2 cup shredded coconut
  • 8 oz sweetened condensed coconut milk

Instructions

  • Crust: Preheat the oven to 350°F. and grease an 8×8 inch pan with coconut oil.Pour the coconut flour, cannabis coconut oil, cannabis sugar, and baking soda into a food processor, and process until combined.Scoop the dough onto the greased pan and press it evenly to create the crust. Bake the crust for 12-15 minutes, or until golden brown.
  • Topping: Pull the crust out of the oven and let it cool slightly for 5 minutes.Sprinkle the chocolate chips, butterscotch chips, pecans, and unsweetened shredded coconut over the crust.Then pour the sweetened condensed coconut milk over the topping.Return the cookie bars to the oven and bake an additional 25 minutes.Once the cookie bars are baked, let them cool completely before serving.
