Lemony Grilled Chicken, Kale and Cannabis Salad

Today we are making a delicious Lemony Grilled Chicken, Kale and Cannabis Salad!

It’s a flavorful dish that combines cooked chicken breast and weed oil for an effortless weeknight meal.

It really doesn’t get better than that, right?!

When you combine all of these yummy ingredients together in a large bowl, magic happens!

The best part is that you get to make an Italian-inspired dressing made from cannabis oil and lemon juice, which lends a bold lemony flavour to the dish.

Salad Ingredients:

  • 1 cup of chopped kale
  • 1 tbsp cannabis oil
  • Italian Dressing (recipe below)
  • 2.5 cups cooked chicken breast (chopped)
  • Chopped chives or green onions (optional garnish)
  • Goat Cheese
  • Peaches (fresh)

Flavour: you can expect this crunchy, bold and full salad to be a combination of savoury and citrus. Loaded with chicken, and drizzled with a homemade cannabis dressing. It’s the perfect duo of crunch and crave.

Taste: You’ll taste kale which can be on the bitter side, fresh chicken, fresh lemon, soft goat cheese, sweet peaches, fresh chives and green onions, and of course, cannabis oil.

Expectations: This salad is busy! It’s full of just about everything and is a meal in and of itself.

Ingredients

  • 1/4 to 1/2 Ounce Cannabis
  • 1 Cup Olive Oil

Instructions

  • Decarb your herb by spreading your cannabis evenly on an oven tray And coat with aluminum foil.
  • Place in the oven on 240F/115C 45 minutes, and then let it cool down.
  • Grind your cannabis or chop it in chunks.
  • Place the cannabis buds in a strong mason jar, add olive oil and (1 tsp of sunflower lecithin)
  • Place your closed jar in cold water and let it come to a boil, Boil for 2 to 3 hours.
  • TIP: U can also add other herbs such as Thyme, rosemary etc for an extra flavor.
  • Strain through Cheesecloth.
  • Let it cool
  • Now you can use the Cannabis Oil to make edibles or to cook with the oil

Equipment

  • Large Bowl
  • Sharp knife
  • Cutting Board
  • Cookie Sheet
  • Parchment Paper
  • Lemon juicer/squeezer
  • Small bowl

Ingredients

  • 1 cup chopped kale fresh
  • 3 cups cooked chicken breast cubed
  • 5-6 tbsp goat cheese crumbled
  • 2-3 peaches chopped small
  • 1 large tomato sliced

Dressing

  • 1 large lemon squeezed
  • 1/2 cup cannabis oil
  • 3 tbsp dijon mustard
  • 3 tbsp honey
  • 1 pinch salt & pepper each.

Instructions

  • Wash kale, chop it into smaller pieces, and gently massage 1 tbsp of cannabis oil into the leaves, in a large bowl.
  • Pre heat overn to 350 F.Place chicken breast on parchment paper, sprinkle salt and pepper, and cook for about 20 minutes or until done.
  • While the chicken is cooking, start chopping your tomatoes, chives, green onions and peaches.
  • Throw everything into the bowl with kale.
  • Make your dressing!
  • Simply combine cannabis oil, dijon, honey, and freshly squeezed lemon togeter in a small bowl and mix.
  • Once the chicken is cooked, let it rest for 5 minutes, then chop into cubes.
  • layer your cooked chicken and goat cheese crumbles on top, and pour your dressing on top. Mix well with your hands or salad tongs and enjoy!
