Jalapeno & Cannabutter Stuffed Chicken

I’ve been meaning to test out this recipe for a while now, but WOW, Jalapeno & Cannabutter Stuffed Chicken is the bomb!

I learned through experience that baking chicken stuffed with cheese and jalapenos is one of the best things you can do when you want something a little bit spicy and different!

Plus, when you stuff chicken, for some scientific reason? The chicken stays juicy, moist and barely ever dries out.

I double batched this one because I wanted some leftovers which would hold up really well in the fridge – and labelled them accordingly so little hands wouldn’t touch the adult treats.

Try to get organic chicken if you can, but a family-pack at any grocery store will be great too!

We’re using cannabutter for this recipe, so if you haven’t made it before – best to whip up a double or triple batch so you can use it on a regular basis.

I like to make it and freeze it into ice cube trays – each little cube is about 1 tbsp so you always know exactly what you’re using.

How To Make Cannabutter

Ingredients

  • 1/4 to 1/2 Ounce Cannabis 
  • 1 cup Butter

Instructions

  • Decarboxylate your weed by spreading your cannabis evenly on an oven tray And coat with aluminum foil.
  • Place in the oven on 240F/115C for 25 till 45 minutes, and then let it cool.
  • Grind your dry cannabis or chop it till fine.
  • Place the cannabis in a strong mason jar, add butter and (1 tsp of sunflower lecithin)(optional)
  • Place your closed jar in cold water and let it come to a boil, Boil for 2 to 3 hours.
  • Strain your butter through a cheesecloth.
  • Cool down
  • Now you can use the Cannabis Butter (Cannabutter)

Notes

If using a mason jar, be sure to start with cold water. Furthermore, it is imperative to let the water cool gradually so that your glass will not shatter.

  • Parchment Paper
  • Sharp knife
  • Small Microwave-Safe Bowl
  • Pastry Brush

Ingredients

  • 2 fresh chicken breasts
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp cayenne
  • 1 pinch salt & pepper
  • 5 tbsp cannabutter melted
  • 6 tbsp cream cheese room temp
  • 1 jalapeno chopped finely
  • 2 tbsp fresh dill
  • 1/2 tbsp fresh lime juice
  • 2-3 tbsp olive oil

Instructions

  • Start by patting your chicken breast with a paper towel – this reduces moisture on top, and allows for the spices and butter to stick.
  • Slice your chicken breasts into pockets – not all the way through, and do this length-wise. Place them on a parchment paper lined cookie or baking sheet.
  • Set the oven to 350 C to heat up.
  • Place cream cheese, jalapeno, dill, lime juice, room temp cannabis butter, and spices in a bowl, and mix until fully combined.
  • Open the chicken pockets, and spread the mixture inside. Save some to spread on the outside of the chicken too, and save a little for dipping when the chicken is done.
    Drizzle olive oil over top and pop in the oven, uncovered.
  • Bake in the oven for about 20 minutes, serve immediately and enjoy!
