Today we’re whipping up Homemade Bud Bagels in our Canna-Kitchens!
Are you ready? (it’s not as hard as you might think!)
The very first step is to obviously, make the dough! You’ll need 5 ingredients and a little dash of patience.
Once you’ve got the dough, you can enjoy making some cream cheese and cannabis-infused spread that is easy, tasty and perfect for any time of day.
Here’s What You’ll Need To Get Ready:
Warm Water: the bagel dough needs this.
Yeast: Helps the dough to rise. Instant or active dry yeast is best.
Bread Flour: This is a no-skip, must-use option. We want to make sure our bagels are dense and chewy, and not soft and fluffy. Bread flour is not to be substituted!
Brown Sugar: because it’s incredible.
Salt: because it’s going to add the perfect bud-bagel flavour that you’re after.
How To Shape Bagels
Shaping your bagels is easier than it looks. Just poke your finger through the centre of the ball of dough, widening it to about 2 inches.
That’s it! They don’t have to be perfect – but they WILL taste perfect!
A Bagel Bath
It sounds a little far-fetched, but the bagels need a bath!
They absolutely, without a doubt, need to cook for 1 minute on each side, in a pot of boiling water.
This gives the bagels a beautiful shine and a nice crisp coating. It also pretty much guarantees that they’ll hold their shape in the oven too!
Today, we’re making plain bagels – but you can create any combination you like once you get good at it.
Like anything, especially when using weed – start low and slow and build up to fancy, and more complicated dishes.
Ready, Set, BAGEL!
perfectly crisp and chewy bagels with cannabis-cream cheese
Whisk the warm water and yeast together in the bowl of your stand mixer fitted with a dough hook attachment. Cover and allow to sit for 5 minutes.
Add the flour, brown sugar, and salt. Beat on low speed for 2 minutes.
Turn the dough out onto a lightly floured surface. With lightly floured hands, knead the dough for 4-5 minutes.
Lightly grease a large bowl with oil or nonstick spray. Place the dough in the bowl, turning it to coat all sides in the oil. Cover the bowl with aluminum foil. Allow the dough to rise at room temperature for 60-90 minutes or until double in size.
Line two large baking sheets with parchment paper or silicone baking mats.
When the dough is ready, punch it down to release any air bubbles. Divide the dough into 8 equal pieces. Shape each piece into a ball. Press your index finger through the center of each ball to make a hole about 1.5 – 2 inches in diameter. Next, we'll prepare the bagel bath.
Preheat oven to 425°F (218°C).Water bath:Fill a large, wide pot with 2 quarts of water. Whisk in the honey. Bring water to a boil, then reduce heat to medium-high. Drop bagels in, 2-4 at a time, making sure they have enough room to float around. Cook the bagels for 1 minute on each side.DO NOT SKIP THIS STEP!
Using a pastry brush, brush the egg wash on top and around the sides of each bagel. Place 4 bagels onto each lined baking sheet. Bake for 20-25 minutes, rotating the pan halfway through. You want the bagels to be a dark golden brown. Remove from the oven and allow bagels to cool on the baking sheets for 20 minutes, then transfer to a wire rack to cool completely.
Cannabis Cream Cheese
While the bagels are in the overn, with a mixer, blend cream cheese, seasonings, and cannabis oil together until whipped. Cover and set aside.
Spread liberally overtop of your homemade bagels, toast, and enjoy!
