Cube your veggies, or if frozen, prepare them on the cookie sheet with parchment paper. Drizzle with cannabis oil, half the thyme, all of the honey and salt and pepper. Roast for about 20-25 minutes.
Cut bacon into little 1/4 inch strips. Pat the duck dry, and score the skin-side of the duck. Place the duck into a non stick pan, skin DOWN. Cook for about 10-12 minutes then flip for about 3 minutes.
Transfer the duck to a cookie sheet with parchment paper, roast duck in oven for 8-13 minutes.
Meanwhile, in a pan, cook bacon until crisp. Add in garlic, maple syrup, mustard and thyme. Remove from the pan, add in sour cream ( 1/2 cup) and 1/4 cup water.
When duck is done, remove and transfer to a plate. Add veggies and drench everything in the maple bacon sauce. Enjoy!
