Chopped Chicken & Cannabis Bomb Salad

You’re going to love this take on a viral Tik Tok salad recipe because today we are making Chopped Chicken & Cannabis Bomb Salad.

It’s a vibrant salad that will have you dreaming of warmer weather and it’s light, refreshing, nourishing with juicy chicken to top it all off.

We’re also going to drizzle homemade green goddess salad dressing over top of all of the fresh ingredients to make this 100% addictive.


Green Goddess Salad Dressing

Green goddess dressing is healthy, but not heavy which is the perfect complement to this simple salad and here’s what goes in it:

  • Shallots – they are such a tasty little treat that is milder than an onion – it really works well when eaten raw.
  • Garlic – it’s pungent and helps round out the flavours of the dressing plus it’s very good for you!
  • Pine nuts – pine nuts are a superfood, which a mild nutty flavour that is perfect for today’s recipe
  • Fresh basil – it creates the gorgeous green colour, yes, but it’s also so tasty and flavourful!
  • Green onions – you can top them on anything, and they actually pack a lot of fibre.
  • Vinegar – rice vinegar or white wine vinegar works great and they have a nice mild taste that doesn’t overpower the dressing.
  • Cannabis oil – need we say more?
  • Lime juice – lime is bold, lends the acidity that we need, and is soo bright and refreshing!
  • Jalapenos – if you’re a fan of spice you’re going to love adding it in – but you don’t have to. It’s completely optional and the recipe today doesn’t depend on it.
  • Parmesan cheese – freshly grated or shredded parm makes everything taste better. It’s a nice balance to everything else going on in the salad so don’t skip!
  • Chicken Strips – just purchase the pre-made, pre-cooked to make it easy on yourself.

Ingredients

  • 1/4 to 1/2 Ounce Cannabis
  • 1 Cup Olive Oil

Instructions

  • Decarb your herb by spreading your cannabis evenly on an oven tray And coat with aluminum foil.
  • Place in the oven on 240F/115C 45 minutes, and then let it cool down.
  • Grind your cannabis or chop it in chunks.
  • Place the cannabis buds in a strong mason jar, add olive oil and (1 tsp of sunflower lecithin)
  • Place your closed jar in cold water and let it come to a boil, Boil for 2 to 3 hours.
  • TIP: U can also add other herbs such as Thyme, rosemary etc for an extra flavor.
  • Strain through Cheesecloth.
  • Let it cool
  • Now you can use the Cannabis Oil to make edibles or to cook with the oil

How To Make Green Goddess Salad

  1. Slice up your leafy greens into thin ribbons
  2. Prepare your salad toppings by chopping everything up
  3. Slice your scallions into 1/4 inch cylinders
  4. Make your salad dressing in a food processor
  5. Put together, add pre-cooked chicken slices and nibble away!

  • Food Processor
  • Cutting Board

Ingredients

  • 1/4 cup pine nuts
  • 1/2 cup fresh basil chopped
  • 1 small shallot
  • 1/2 whole jalapeno remove seeds if you don't like spice
  • 2 garlic cloves
  • 2 tbsp rice vinegar seasoned
  • 2 tbsp chopped green onion
  • 2 whole limes squeezed
  • 1/3 cup cannabis oil
  • 1/4 cup parmesan cheese grated or shaved
  • 1 tsp salt & pepper each

SALAD

  • 1 head lettuce sliced into thin strips
  • 2 lg cucumbers sliced
  • 6 cups green onions chopped

Instructions

  • Slice up leafy greens into thin ribbons.
    Prepare your salad toppings:Quarter and cube up the cucumbers. Slice scallions into 1/4 inch cylinders.
  • Make your salad dressing: Place pine nuts, fresh basil, a small shallot, jalapeño, garlic, and chopped green onions into a food processor. Use a citrus juicer or hand reamer to squeeze the juice from two limes into the food processor. Pour in cannabis oil and your choice of vinegar.
  • Add everything together, and sprinkle parm cheese on top!
