Biscuit, Bud & Veggie Pot Pie

As the weather cools, and fall approaches – one of the best things to make is a comforting and hardy: Biscuit, Bud & Veggie Pot Pie.

Easy to make, and a perfect meal that includes cannabis and healthy veggies – you’re going to love today’s recipe!

So is this a pot pie, or casserole? Normally a pot pie is prepared with pie crust, and baked in a pie dish.

But today, we’re going to bake a vegetable-filled dish with biscuits. Unusual? Yes. Tasty? Oh, you betcha!


Homemade Biscuit Topping

Believe it or not, this is a much easier way to make a pot pie with the same savoury flavours, in less time. Perfect win-win meal!

You will need a pastry cutter or a food processor to cut the cold butter into the dry ingredients.

What you’re left with is a perfectly crispy/crumbly biscuit topping covering a veggie mix that is divine.


What Ingredients Do I Need?

  • Cannabutter – it adds flavour and helps the filling to thicken.
  • Veggies – onion, celery, carrots and mushrooms (only if you like)
  • Garlic – makes everything better!
  • Flour – it helps thicken the gravy.
  • Seasonings – salt, pepper and fresh thyme – dried is fine too.
  • Vegetable Broth – the liquid that helps everything stay moist and flavourful.
  • Whole Milk – helps thicken the filling and is 100% necessary!
  • Parsley – a fresh herb that brings it all together beautifully.

How Do I Make Cannabutter?

Easy! Follow the step-by-step recipe instructions below.

I always suggest making a double batch and freezing it. That way you’ll always have it around when you feel like making weed edibles.

Ingredients

  • 1/4 to 1/2 Ounce Cannabis 
  • 1 cup Butter

Instructions

  • Decarboxylate your weed by spreading your cannabis evenly on an oven tray And coat with aluminum foil.
  • Place in the oven on 240F/115C for 25 till 45 minutes, and then let it cool.
  • Grind your dry cannabis or chop it till fine.
  • Place the cannabis in a strong mason jar, add butter and (1 tsp of sunflower lecithin)(optional)
  • Place your closed jar in cold water and let it come to a boil, Boil for 2 to 3 hours.
  • Strain your butter through a cheesecloth.
  • Cool down
  • Now you can use the Cannabis Butter (Cannabutter)

Notes

If using a mason jar, be sure to start with cold water. Furthermore, it is imperative to let the water cool gradually so that your glass will not shatter.

Ingredients

BUD BISCUITS

  • 2 cups all purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 6 tbsp cannabutter cold, and cubed.
  • 1 cup + TWO TBSP whole milk divided

FILLING

  • 1/4 cup cannabutter
  • 1 cup EACH: carrots, celery, mushrooms, onions chopped finely
  • 3-4 garlic cloves minced
  • 1/3 cup all purpose flour
  • 1 tsp salt & pepper each
  • 2 tsp fresh thyme
  • 2 cups vegetable broth
  • 1/2 cup whole milk
  • 2 tbsp fresh parsley chopped finely

Instructions

BUD BISCUITS FIRST:

  • Whisk the flour, baking powder, and salt together in a large bowl or use a food processor. Add the cannabis cold butter and cut into the dry ingredients with a pastry cutter or pulse several times in the processor.
    Cut/pulse until coarse crumbs form. Add the milk, and then stir/pulse until the dough comes together. Dough will be very shaggy and a little wet. If it’s too dry, fold in another Tablespoon of milk. If it’s too wet, fold in another Tablespoon of flour. With generously floured hands, shape biscuit dough into 8-9 1-inch thick discs.
    Biscuits don’t have to be perfect or neat. Place shaped biscuits on a lined plate or baking pan, cover tightly, and refrigerate until ready to use in step 4 or for up to 2 days.
  • Make the filling: Melt the butter in a large skillet, pot, or 11-12 inch oven-safe skillet over medium heat. Add the onion, carrots, celery, mushrooms, and garlic. Cook, stirring occasionally, for 5 minutes or until vegetables have softened and released some liquid.
  • Stir in flour, salt, pepper, and thyme until flour has absorbed all the liquid. Stir in the broth and milk. Cook and simmer for 7-9 minutes or until thickened into a thick soup-like consistency. Stir in the mixed vegetables and parsley, and then remove from heat. Taste and add more salt, pepper, thyme, or parsley to taste if desired. Cool for 5 minutes.
  • As it’s cooling, preheat oven to 400°F (204°C).
    Next, pour filling into greased 9-inch deep dish pie dish that’s 2 inches deep.
    Arrange cold biscuits on top, squeezing them in as necessary to fit.
    Brush the tops of the biscuits with remaining milk.
    Bake for 25 minutes, and then keeping the pot pie in the oven, turn oven up to 425°F (218°C) and bake for 5-6 more minutes or until biscuits are golden brown on top.
