Baby Potato Salad with Cannabis Infusion

Looking for something to make for an end-of-summer BBQ? Today we’re making Baby Potato Salad with Cannabis Infusion.

So why baby potatoes?

Well, they’re a great way to make your salad look and taste amazing. We’ll be cutting them into coins, and adding flavour and cannabis butter, as well as a little drizzle of cannabis oil.

Ingredients & Flavour Profile:

Taste: Creamy, satisfying, savoury and decadent. All of these flavours just work perfectly together.

Texture: soft, but not mashed, with a little crunch here and there.

  • Baby potatoes
  • Salt
  • Mayo
  • Sour Cream
  • Dijon Mustard
  • Lemon
  • Chives
  • Parsely
  • Sugar
  • White Pepper
  • Hard-Boiled eggs
  • Red onion
  • Bacon bits
  • Cannabis butter & Cannabis oil

How To Make Cannabis Butter

A recipe on how to make cannabis butter at home. After many cannabutter recipes, we find that this is by far the best way to infuse weed with butter.

Ingredients

  • 1/4 to 1/2 Ounce Cannabis 
  • 1 cup Butter

Instructions

  • Decarboxylate your weed by spreading your cannabis evenly on an oven tray And coat with aluminum foil.
  • Place in the oven on 240F/115C for 25 till 45 minutes, and then let it cool.
  • Grind your dry cannabis or chop it till fine.
  • Place the cannabis in a strong mason jar, add butter and (1 tsp of sunflower lecithin)(optional)
  • Place your closed jar in cold water and let it come to a boil, Boil for 2 to 3 hours.
  • Strain your butter through a cheesecloth.
  • Cool down
  • Now you can use the Cannabis Butter (Cannabutter)

Notes

If using a mason jar, be sure to start with cold water. Furthermore, it is imperative to let the water cool gradually so that your glass will not shatter.

Next up is Cannabis Oil – and I like to use just a little drizzle in my salad to make everything stick and taste wonderful!

You don’t have to use oil, in fact, cannabutter will do just fine and taste incredible on its own – but if you want to uplevel, try a little drizzle on your baby potato salad.

  • Strain through Cheesecloth.
  • Let it cool
  • Now you can use the Cannabis Oil to make edibles or to cook with the oil

Baby Potato Salad with Cannabis Infusion – The Recipe

For today’s recipe, you’re going to need very few items which make this not only a quick and fast one but less clean-up in the kitchen which is always a bonus, right?!

I always like to grab all of my ingredients, lay them out on the counter, grab my cooking utensils and dig in.

Equipment

  • medium or large cooking pot x 2
  • Large Bowl
  • Small bowl
  • Spatula
  • Sharp knife

Ingredients

  • 35-40 baby potatoes slice into coins
  • 1/2 cup mayo
  • 1/2 cup sour cream
  • 3 tbsp Dijon mustard
  • 1/2 lemon squeezed
  • 2 tbsp sugar
  • 2 tbsp cannabis oil
  • 4 tbsp cannabis butter
  • 1 tsp white pepper
  • 4-5 hard boiled eggs cooled
  • 4 tbsp bacon bits
  • 1/4 cup red onion chopped
  • 1/4 cup parsley & chives each

Instructions

  • Prepare a medium-large pot with salted water, and turn heat to high. Boil potatoes until tender.
  • While potatoes are boiling, you can place another pot with water on the stove and cook your eggs. Remove from heat whe finished and place immediately in ice cold water.
  • Strain potatoes, place in a large bowl, and drizzle cannabis oil and place cannabutter on top of the potatoes. Allow them to cool for about 15 minutes
  • Next, add in mayo,dijon mustard, sour cream, parsely, chives, salt, sugar and white pepper together in a small bowl. Mix and set aside.
  • Peel your eggs, and chop into small pieces. Place in bowl with potatoes, add bacon bits, red onion. Add in dressing, mix thouroughlyand enjoy!
  • Make sure to always label your edibles to avoid confusion or problems!
