Zest 2 lemons and set aside
Cut 5 fresh lemons in half
Juice 5 lemons and set aside and whisk the eggs in a separate bowl and set aside.
Heat the lemon juice and sugar in a suacepan on medium, whisking gently then remove from heat, and pour the mixture over the eggs
Put everthing back in the saucepan, and back on the heat.
Remove from heat, add in butter, whisk. If you need to remove clumping, just pour it into the blender.
Store in a sealtight jar, after cooled. Use on pastries, cookies, ice cream, desserts!
