Chilled Cucumber, Cannabis Avocado Soup

Equipment

  • Spatula
  • Veggie peeler
  • Sharp knife
  • Cutting Board

Ingredients

  • 1 whole English cucumber peeled, and cut into cubes
  • 2 med avocado diced
  • 1 cup Greek yogurt
  • 1 cup veggie broth
  • 1 tbsp lemon juice fresh
  • 1/2 tbsp apple cider vinegar
  • 2 tbsp scallions
  • 1 dash each: salt & pepper
  • 4 tbsp Cannabis oil save 1 tbsp to drizzle on top later

Instructions

  • In a food processor or blender, add the cucumber, avocado, Greek yogurt, vegetable broth, lemon juice, apple cider vinegar, scallions, cannabis oil, salt, and pepper. Blend until smooth and creamy.
  • Chill in the fridge for 30 minutes, or until you're ready to serve. Drizzle with cannabis oil and a few slices of cucumbers or some toasted almonds for extra crunch!
