Easy Cranberry Cannabis Pistachio Cheese Log
Tangy, Crunchy Cannabis-Infused Goat Cheese Log - Perfect for Thanksgiving and the Holidays!

Cheese Log Coating
- 1 1/4 cup fresh, whole cranberries
- 1 cup shelled, roasted pistachio nuts
- 2 tbsp cannabutter
Cheese Log
- 1 goat cheese log
- 4 oz cream cheese softened
- 2 tbsp honey
- 1/4 tsp ground ginger
- 1/4 tsp ground cinnamon
- 1/4 tsp thyme
- 1/4 tsp salt
- 1/4 tsp rosemary
- 1 dash freshly ground pepper
Add the cranberries, pistachios and cannabutter to your food processor and chop into small pieces (just don't over-process). Remove ½ cup and add it to a medium bowl. Add all remaining ingredients to the bowl and stir to combine.
Add mixture to a large piece of plastic wrap, and form into the shape of a log. Wrap it up and place in the freezer for about 20 minutes.
Line counter with about a large piece parchment paper. Add all of your coating ingredients to the parchment paper, and spread into a rectangle a little bigger than the size you want your cheese log to be. Spread your goat cheese mixture overtop, and with the help of the parchment paper, roll and shape into a log. Sprinkle left over topping on top to finish it off. When you are ready to serve, remove from refrigerator 15 minutes beforehand so it can soften. Drizzle generously with honey just before serving. Serve with crackers or cannabis crackers!
